Dry cured by our own expert butchers, which means the curing salt is rubbed in to the pork by hand and left to cure for 2/3 weeks to give it that real Traditional bacon taste (as bacon used to taste).  Once Cured it is Smoked at a local smokehouse to give a real mouthwatering smoked taste.
